Moisture Adsorption Isotherms of Tarhana

Abstract
In this study, moisture adsorption isotherms of tarhana were determined at 25 and 35°C and as the temperature increased, the decrease in the adsorbed moisture content was observed at water activity between 0.2 and 0.9. This case was explained by possible changes in adsorption mechanism that occured in water-water and water-adsorbent interactions to water adsorption. Isoteric heats that accompanied water adsorption, and free energy values were calculated by using modified Clausius-Clapeyron equation, and Chung and Pfost equation respectively.
