A Research on Chemical Composition of Tomato Pulpe

Abstract
Distribution of main organic acids (citric, malic), sugars (glucose, fructose, sucrose) and mineral compounds (K, P, Na, Ca, Mg, Fe, Zn, Cu) of tomato pulpe were investigated. These samples were prepared from twelve different tomato varieties which are commonly processed to tomato paste in Turkey. In the samples, glucose (10.33-13.50 mg/l) and fructose (12.58-15.04 mg/l) contents are approximately the same amount. Citric acid content varies between 2.73-3.99 mg/l while malic acid content varies between 0.24-0.39 mg/l. Potassium has the highest concentration (2282-2668 mg/kg) among all of the minerals. It is followed by magnesium (97.9-120.8 mg/kg) and phosphor (76.9-113.0 mg/kg). Iron content varies between 5.0-12.2 mg/kg.
