Abstract

1wieved.In this study, it is intended to find out the shelf life of rainbow trout fillet under refrigerated conditions (+4 ºC±1). Stretch film packing includes two pieces of fillets placed on aluminium covered cartoonsheet. Sensory, physical and chemical analysis have been applied every other day , and the findings have been compared with the previous studies and have been found in line with the data available. It is found out that the cold-stored skinned trouts were good until the 12 day, were of low quality but consumable on the cold- stored on the 14 day and that they turned spoiled at the 16 day.
